Need a little help planning out dinner for the fam this week?
Here's what I've got on the menu for mine! Keep in mind, we're being super-healthy right now, so feel free to take my suggestions and tweek them to fit your family's style!
Monday night - Whole wheat pasta with homemade tomato sauce, and meatless quinoa meatballs. I use this recipe here for my quinoa balls. I leave out the thyme, though, and instead use fresh italian parsley. I also use steel cut oats instead of bread crumbs.

Tuesday night - Chipotle-style burrito bowls, with quinoa and spicy-bbq tofu. Basically, tons of veggies (red/yellow/orange peppers, black beans, corn, spinach, onions), with cilantro-lime quinoa, and tofu marinated in a homemade spicy BBQ sauce then sauteed. Serve in a giant bowl, a la Chipotle.
Wednesday night - Nicoise salad with blacked tilapia. Mixed greens topped with cold sweet potato, hard boiled egg, tomato, and chilled green beans. Blacked tilapia (grilled or sauteed for about 4 minutes on each side) and balsamic dressing on top.
Thursday night - Veggies quesadillas with corn tortillas, great for using up the leftovers from Tuesday night! Serve with homemade guacamole and salsa
Friday night - Curry chicken wraps, served with roasted asparagus and tomatos. For curry chicken, I mix one cup of greek yogurt with 2 tbsp curry, 1 tsp garlic powder, and 1 tsp ground ginger. Marinate the chicken overnight, then saute. I spread a little peanut butter on the wraps, and then stuff with spinach, red onion, carrots, and red grapes halved.
