Sorry for the delay in this week's post! Yesterday was a CRAZY busy, frozen lasagna and bagged salad for dinner, kinda day!
So this week's menu...
Tuesday - Southwest Lettuce Wraps with chipotle-seasoned ground beef, chopped onion, bell peppers, tomato, avocado, corn, and black beans. Sprinkle cheddar and drizzle a little balsamic vinegar in each wrap
Wednesday - Herb and Citrus Roasted Chicken served with salad... Gotta love a big one-pot meal! Plus it'll be good in this hot weather!
Thursday - leftover Chicken Salad wraps made with avocado (hold the mayo!), tomato, onion, red grapes, carrots, and celery.
Friday - GRILL TIME! This week is crazy-busy and there's nothing easier than throwing some turkey sauage on the grill along with some peppers and onions (sliced and wrapped in foil). Serve on rolls with corn-on-the-cob... For no clean-up, make the corn on the grill too!
