Monday - Teriyaki chicken with asian noodles
Whenever I make "asian noodles" I use this same recipe. Make whole wheat noodles al dente, drain, and set aside. then steam up some broccoli and some edamame (I use frozen). Next, saute half a yellow onion. Mix the pasta, broccoli, edamame, and onion in a bowl. Add shredded carrots, diced scallions, and some chopped peanuts. For the sauce, I'll use about 4 tablespoons of soy sauce, 4 tbsp of honey, and 2 tbsp of chili-garlic sauce. It's good hot, but it's also good served cold! So you can make it ahead! You can also try adding mushrooms, yellow peppers, or cilantro.
Tuesday - Salmon in a dijon-brown sugar marinate
So... so... good! There are a ton of different recipes out there for this... My favorites are here and here. I usually serve salmon with roasted asparagus and tomatoes, because they all cook at the same temp for the same amount of time!
Wednesday - Greek Pita Pockets with Greek salad
For Greek wraps, you can get fancy and use ground lamb, or be thrifty like me and use ground beef, turkey, or even chicken! I use turkey. Saute with cumin, curry, and ginger. Chop up some cucumber, tomato, and red onion, and stuff into pitas with the ground meat, some baby greens, feta cheese, and tzatziki sauce. Make an easy greek salad on the side with all the things you've already chopped! Add in kalamata olives, pepperoncini, and greek dressing.
