Tuesday - Carribean Pulled Pork Sandwiches
Allow me to introduce you to one of my favorite places for great recipes: Kevin and Amanda. Her recipes are easy and I have never tried one that failed! I'll be trying her Carribean Pulled Pork recipe for the first time this week!
Wednesday - Key Lime Chicken
Here's another household favorite! Marinate chicken breasts in 1/2 cup soy, 1/4 cup lime juice, 2 TSP minced garlic. If you have chili-garlic sauce, you can use 2 TSP of that instead of the garlic and it's AWESOME. Prepare the chicken however you prefer, but I think it tastes best when you cube it and grill kebobs! Goes great with rice & beans
Thursday - Grilled Caprese Sandwiches
Thursday is going to be a crazy day for me, so I'm preparing ahead! For this dinner, I'll use a loaf of sour dough or some other artisan, crusty bread. A couple tomatoes, a ball of mozzerella (not a block! Blocks are too hard and won't melt), fresh basil, and some pesto. Slice the bread, and toast it just a little! Spread some pesto on the bread, then add slices of tomato, cheese, and basil. Put it in the oven on 350 for a couple minutes, just to melt the cheese.
Friday - One Pot Pasta...?
Okay... I found this recipe on Pinterest, and I just think there is NO WAY, NO CHANCE, that it actually works. But it seems to have TONS of re-pins, and lots of likes and comments... So I figured I will give it a shot! It looks pretty amazing. One Pot Pasta with take out on speed dial as a back up! I'll report back on Monday and let you know how that one goes down...
