Just wanted to share that from last week's menu, the paella was fantastic and the butternut squash risotto with french onion soup was the winner of the week!
For the paella, I ended up using spicy turkey sausage. It was DELICIOUS, slightly healthier, and on sale! I also didn't use the red bell pepper... simply because I forgot to! Oops! But it was fantastic anyway!
The butternut squash risotto was AWESOME! Next time though, I may use gruyere instead of parmesan. I also used fontina on the french onion soup which was GREAT, but next time I'll use gruyere here as well. Also, the trick to the perfect french onion soup was the cider! I used Trader Joe's brand and it was perfect!
