Monday - Turkey Meatloaf
This morning, Laurie mentioned to me that she had a meatloaf sandwich... And it's all I've been thinking about since! I LOVE turkey meatloaf (I think because turkey is lighter and less dense, it actually makes for a better consistency). For a basic recipe, follow Ina's here, but I add carrots and sometimes peppers. For the sauce though, get just a little fancy and use Alton's recipe! I serve mine with Annie's White Cheddar mac and cheese (easy, cheap, and delish!). Tuesday - Pumpkin Ravioli
In the cold section at my grocery store, I found this awesome looking pumpkin ravioli! They had cheese or sausage stuffed, and I decided the cheese would go great with an easy brown butter/sage sauce. Serve with sprinkled cheese on top, and a salad on the side.
Wednesday - Taco Night
Head's up, taco fixings are on sale at Target! Stock up, and have a fun and easy taco night this week! I might even crumble up the leftover meatloaf, add a little BBQ sauce, and saute the meat for BBQ turkey tacos!
Thursday - Chicken Parm
The trick to chicken parm is to get the chicken to room temp before you flatten it, and then to flatten is as much as possible! Get the oil nice and hot (without burining or boiling) before you brown it, and then bake for just about 20 minutes.
Friday - Leftover Chicken Parm Paninis
True story: I ONLY make chicken parm so I can make these sandwiches the next day! Ciabatta bread, arugula, mozzarella, tomato sauce, and leftover chicken. Use a panini press, or make them on your stove top the way you would a grilled cheese.
